Description
The experience begins in the Zocalo of San Pedro Cholula (meeting point) where we will have an explanation of what the market was like in Prehispanic times. From there we will go to the municipal market of San Pedro Cholula where we will have a tour and you will learn about the customs and traditions of said space. We will choose and buy some some seasonal ingredients that will be used during the preparation of our meal.
Finishing the tour of the market, we will walk to the Chef’s kitchen where we will cure a pulque and prepare three recipes that are representative of the evolution of Mexican gastronomy through time. These recipes will include a Prehispanic dish, a colonial one, and a contemporary recipe using the seasonal ingredients chosen during the visit to the market.
The historical context of the recipes will also be provided. During the cooking practice we will all work together to prepare the recipes. Finally, we will enjoy the food prepared we prepared and help out to clean the work area.
